How to Pickle At Home

At around 8:00pm, there’s a good chance that you’ll find me or my boyfriend snacking on a pickle. I grew up eating them straight from the jar, on sticks, and off of plates of friends who held wrong opinions on pickles. There’s something so satisfying about the snap of a pickle; the salty/brininess satiates any craving I have that may have otherwise been cured with the less-than-healthy potato chips that fill my pantry. Pickles are constantly in my fridge, but heading out to the store to replenish my pickle supply is a whole thing right now. Instead, I’ve dug out my pickling kit and will soon be on my way to making my own lacto-fermented pickles at home.

Pickle kits are pretty easy to come by. This kit includes air-tight lids, so all you need to do is supply the jars. You can get a beautiful ceramic crock set with weights, complete with a water seal lid. This all-in-one kit comes with a large glass jar with a lid, an airlock, a glass weight, and a packet of pickling salt. Your options are endless! I highly recommend having pickled veggies in your fridge, for snacking or garnishing purposes. You’re probably cooking a lot of tacos right now, why not add some pickled onions or radishes? Dilly Beans are also a great snack to keep on hand.

Pickling doesn’t take a lot of prep work, but you have to keep an eye on things, which makes it perfect for trying it out now. It’s a healthy alternative to salty snacks you may reach for when you’re bored, and hey, eating something you’ve made with  your own two hands just feels great right now, doesn’t it?

Best Snacks for Stress Eating

Look, I’m not above finishing an entire bag of Zapp’s Voodoo Chips in one sitting, and that’s on a normal day. But these are abnormal days, which means stress eating is high on my to-do list. Rather than going to town on a box of Ritz and American cheese (don’t judge me), I’ve been trying to reeducate my palette and eat “healthier” snacks. I’m not talking nuts and seaweed here, though they are tasty. These are the snacks that are just a slight upgrade from the everyday salty/sweet sustenance. Here are the pantry snacks that are helping me stress eat better.

I’ve always been a dessert after dinner person. These little ice cream dough balls are the perfect substitute for digging into a pint with a spoon. They’re soft and pillowy but still sweet and satisfying. Eat two of them and your sweet tooth will be satisfied.

Honestly, my boyfriend and I can’t keep bags of this in our apartment long enough. The salty-savoriness of this nutritional yeast-covered popcorn is the perfect replacement for potato chips. You can even lick your fingers after.

Speaking of popcorn and chips, Popcorners are a great alternative to regular popcorn, too. They’re like if popcorn and potato chips had a triangular baby. They’re airy but still solid and crunchy. The White Chedder is my favorite, but the Kettle Corn is a close second.

I think I have an addiction to these. They’re fully baked snap peas (hold on, don’t leave now) that have been dusted in bold flavors like Caesar, Southern Style BBQ, Wasabi Ranch and more. They don’t have a resealable bag though, which means eating them in one sitting is actually conservational.

These bars were made for snacking. They’re gluten-free, vegan, and honestly taste really great. You won’t feel like you’re eating a protein bar because that chalky weirdness is nowhere to be found.

I got these as a gift years ago and while I don’t actually use them to eat, they are fun to play with. 

Look at this little guy! Fill it with a fun air plant and pretend it’s getting blown up all over again.

I love these glasses. They’re small enough to hold a cocktail but can also be used for juice or iced tea. The shaped Death Star doesn’t impede ice and they’re lightweight and easy to drink from.
