Ratio Eight Coffee Maker Brews The Perfect Cup

One of my fondest memories is when my good friend discovered the Chemex pour over. I remember going to his house and watching him go through the whole routine — weighing beans, boiling water to the exact right temperature, and pouring it in concentric circles over the grounds. It seemed a little obnoxious, but moments later, I ate (or drank) my words. It was by far the most delicious cup of coffee I’d ever had in my life, and remains up there to this day. I’ve tried recreating the cup on my own, but ultimately, it’s a lot of work and a big fuss to make a cup of coffee that is rarely, if ever, as good. Or so, I thought

I’ll start by saying that the Ratio Eight is not an espresso maker. Think of it as a machine optimized to make a perfect Chemex pour over every single time. All you have to do is fill the back up to the demarcated line with water, measure out 40g of coarse ground coffee (if you don’t have a scale, get with the program), put the carafe in and press a button. The machine takes care of the rest. The Ratio Eight will heat your water to the exact right temperature, then the stainless steel shower head will evenly distribute water over the grounds. The Ratio takes care of “blooming” your coffee, meaning it extracts CO2 to minimize bitterness, and there is even a carafe you can buy to make sure coffee stays warm. All in all, the Ratio Eight is like a Mr. Coffee—sturdy, steadfast, your go to. The only difference (and it’s a big one) is that the Ratio Eight makes an exceptional cup of coffee.

But for me, investing in a coffee machine is partially about looks. I don’t necessarily love the spaceships that espresso makers have become. But the Ratio, for all of its high-tech innovation, remains a beautifully elegant machine. Not only does it make an amazing cup of coffee every single time, it’s also a joy to look at.

Happy Valley Meat Company: You can never have too much meat in the freezer in my opinion. Happy Valley will send you meat straight off the farm, frozen, so you can dethaw and cook up something delicious.

Here’s How To Poop During a Pandemic

I don’t know about you but my routine has been disrupted. It seems like everything is off, even things we don’t normally talk about. We’ve been spending more time indoors, exercising less, eating differently, drinking more, and all of these things change and affect the way our bodies work and how we ultimately feel. Poop, funny as it is, is a great indicator for how our bodies are doing. Since so much has changed in our lives, maybe your schedule or frequency is totally off. I don’t really want to hear about it. Best Bag For Long Distance Running

Ali Philippides is the Senior Product Manager here at the Beast, and while I’ve only known her for a few months, I’ve already heard plenty of stories about her going from (pretty much) couch to marathon. I’ve always wanted to run a marathon, and really enjoy long distance running, and since we all have a little more time on our hands, and can probably use the exercise, I decided to talk to Ali about what she finds useful for running, even in today’s circumstances.

When did you start running?

I’ve been an athlete my whole life, but I didn’t start running as my main form of exercise until 3 years ago. For the most part, I was just going out for 2 miles or less, really just focusing on getting out of the house 3 or 4 times a week and keeping a comfortable pace. Back in 2018 I started taking pilates in addition to running and my teacher, who is also an avid runner, suggested I sign up for the New York Marathon lottery. Fast forward to February 2019, I won entry to the NYC Marathon through the lottery and after having never run further than 3 miles straight in my life, I began training for the race, which was in  November of that year. 

What products have you found useful?

I had to learn as I was going about what products worked for me. But the essentials were: Hoka ONE ONE Clifton Shoes, CEP Calf Sleeves (for leg compression), and most importantly my Nathan Hydration Running Belt which held water and gear during the brutally long training runs.

What inspired you to buy the running belt in the first place?

On long runs you need water to stay hydrated and fuel to stay energized. But where do you keep those things? This belt holds two water bottles which is awesome for long runs, and has a pouch that can hold whatever other fuel you need, like Gu gels, Clif bloks, or stroop waffles. It also comfortably held my phone and keys and a couple of credit cards with everything else—which was always a necessity for me on the longest weekend training runs which could be anywhere from 12-20 miles. On marathon day, I managed to carry an Anker cordless charger, 10 gu gels, my wallet, keys, phone, and an Airpod case in that belt. It definitely helped carry me through to the finish line! 

Do you still use the belt even when you’re not running a marathon?

Yeah. Now that I’m finished doing long distance training, I only use the bag to carry my phone and keys. I don’t usually carry water with me anymore, so I’ll just remove the water bottles or take only one. The best part about this bag is that even if you don’t carry much in it, it doesn’t bounce up and down like you might expect. It stays pretty flush to your body and I’ve never been uncomfortable wearing it. 

I like to run, but it’s been hard to get into it lately. Do you have any advice?

What I love about running is that it’s very accessible, and any run, even if you just decide to go around the block, is considered a run. The important thing is to get out there and feel good about the movement. There are some days where I don’t want to run at all, and that’s ok! Some runs I cut short, and some runs I extend longer than I thought they would be. Just remember to listen to your body and do what feels right in the moment. 

Even…like…right now?

During COVID times, I am still managing to get outside and run two or three times a week. My runs have not been very long and I’m totally fine with that at this point. Just getting out of the house for a quick break and light jog feels great. I’ve been wearing a bandana over my nose and mouth while running instead of a mask because it feels easier to breath and more comfortable. I’ve also been sticking to side streets or less crowded areas in my neighborhood to make sure that I can maintain social distancing.

Why would you recommend this bag to someone over any other?

The Nathan bag has functional flexibility while also being super comfortable. Some runners prefer to have less on them when they head out, and there are definitely options like that for sale, but for someone who wants to feel secure about their hydration and gear out on the road, this is a great option for sure.

How to Pickle At Home

At around 8:00pm, there’s a good chance that you’ll find me or my boyfriend snacking on a pickle. I grew up eating them straight from the jar, on sticks, and off of plates of friends who held wrong opinions on pickles. There’s something so satisfying about the snap of a pickle; the salty/brininess satiates any craving I have that may have otherwise been cured with the less-than-healthy potato chips that fill my pantry. Pickles are constantly in my fridge, but heading out to the store to replenish my pickle supply is a whole thing right now. Instead, I’ve dug out my pickling kit and will soon be on my way to making my own lacto-fermented pickles at home.

Pickle kits are pretty easy to come by. This kit includes air-tight lids, so all you need to do is supply the jars. You can get a beautiful ceramic crock set with weights, complete with a water seal lid. This all-in-one kit comes with a large glass jar with a lid, an airlock, a glass weight, and a packet of pickling salt. Your options are endless! I highly recommend having pickled veggies in your fridge, for snacking or garnishing purposes. You’re probably cooking a lot of tacos right now, why not add some pickled onions or radishes? Dilly Beans are also a great snack to keep on hand.

Pickling doesn’t take a lot of prep work, but you have to keep an eye on things, which makes it perfect for trying it out now. It’s a healthy alternative to salty snacks you may reach for when you’re bored, and hey, eating something you’ve made with  your own two hands just feels great right now, doesn’t it?
